I was kinda overwhelmed with the suggestions. I still don't quite know what to go look at, but this is the results of my searching for the items suggested.
Some of these are probably too far away, and some may be too far gone. I thought that I would share.

The black '67 Ford Galaxie looks great. Its important you get the one with the Windsor Motor because the parts are still produced (you can actually build a Windsor block that has no Ford-built components) by the massive aftermarket. Unfortunately, I doubt this car will appreciate.
The continental looks sketchy, but probably has the best resale if you get it clean, but that might take a lot more work than you're willing to do. If you can drop $10,000 into it and know how to do body work by yourself, then you could turn it around to a $30,000 car that you can daily drive without worrying about it dropping in value.
The Impala is in the same camp as the Continental.
I like the Polara, and the 360 is a good motor (well-balanced between fuel economy and performance) but it might be very expensive to repair if things go wrong, and it won't appreciate well either.
Those are my picks.

Go find a 62-64 continental, its the car that literally redefined the luxury car market. I'd love to own one someday.
